Swedish Pancakes
I love a good breakfast on the weekends. I typically skip breakfast & stick with my 20 oz coffee most mornings. But something about the weekends makes me crave something delicious first thing.
Maybe it’s because I have more time & I haven’t been in the office since 4am. I don’t know, but I sure love to kick off my weekends with something good.
Sometimes if the hubs is here I can sweet talk him in to running out & getting to the donut shoppe. Most of the time it’s just not going to happen.
So we make something like these Swedish pancakes. Oh my stars they are so good. Add some whipped cream & berries & swoon!!!!
You see, the hubs is of Swedish heritage. Like his great grandmother is the first generation here in the States. So his family still embraces the family recipes & traditions.
I love it because my family didn’t really care much about family heirlooms, traditions or anything like that. So we try to keep those things we do have alive & pass them down to our kids. It’s important to us & to them. Like this recipe for Swedish Pancakes.

Ingredients
- 3 eggs- beaten
- 3 cups milk
- 3 tbsp butter- melted
- 1-1/2 cups all-purpose flour
- 1 tsp salt
- 2 tsp granulated sugar
- 1 8 oz tub whipped topping- thawed
- 2 cups frozen berries
Instructions
- Beat eggs & 1/2 cup of the milk in a large bowl
- Whisk in flour, salt & sugar
- Add melted butter & remaining milk- mix well
- Heat griddle to 375 degrees
- Ladle a small portion onto skillet - it will run & not hold shape like a regular pancake - this is normal
- These will be thin & won't bubble up like a traditional pancake
- Cook until brown before flipping to cook other side
- **For the filling- combine whipped topping & berries in a small bowl
- Add a little to each pancake & roll
- Top with additional berry mix & whipped cream to serve
