Are you excited about the warmer weather? I sure am because that means we have fresh berries in the house all the time. I really love using them to make something delicious like these Blackberry Crumb Bars.
Since the time my son was just starting to eat solid foods, he has loved blackberries. I used to snack on the ones growing along the trails when I was pregnant with him, so I’m thinking his love for them started much earlier than I originally thought. What’s not to love? Sweet & delicious little gems are perfect for snacking.
The love for blackberries spread like crazy with our kids. Honestly, I don’t think I ever had one until I was pregnant with my son. The hubs picked one & had me try it & I was hooked. I felt so deprived, that I had waited so long in my life to enjoy such deliciousness, so now we are all over-compensating for it.

I love this recipe because it is loaded with fresh blackberries & has that delicious buttery crust that is very similar to my cobbler recipe, only in an easy bar so I can snack on the go.
I mean, it’s not like a regularly eat dessert “on the go” but I love the portability of a yummy bar recipe like this. If I wanted to, I could grab one, and walk out to the back porch without needing anything more than a napkin.

Can I use any type of blackberry in this recipe?
I usually just pick up whatever is available at our farmers market or grocery store. But we did pick up a flat of Marionberries that were great in these bars.
What is a Marionberry?
A Marionberry is a cross between the ‘Chehalem’ & ‘Olallie’ blackberries. It is basically just a different type of blackberry that was developed by the USDA ARS breeding program in cooperation with Oregon State University. They originated in Marion County, Oregon in 1956 giving them their name.
What pan do you recommend for this recipe?
I really love this baking pan. It is so versatile & works great for all my bar recipes & cakes.
How do you store Blackberry Crumb Bars?
Keep these bars in the baking dish & covered with plastic wrap or foil. You could also keep them refrigerated until you are ready to enjoy them. This extends its freshness & flavor. Just heat the individual bars in the microwave for about 8-12 seconds before eating.
HOW DO YOU MAKE Blackberry Crumb Bars?
- Preheat oven to 375 degrees.
- Line 8×8 baking dish with parchment & spritz lightly with cooking spray.
- In small bowl- combine 1/4 cup sugar & cornstarch – stir in lime juice.
- Add blackberries – toss to coat – set aside.
- In larger bowl- combine flour, 1/2 cup sugar, baking powder & salt.
- Add egg yolk, vanilla & butter cubes.
- Using a pastry tool- work the mixture together until it resembles coarse crumbs.
- Spread 2/3 of the mixture into prepared pan – pressing down to even out & flatten.
- Top with blackberry mixture – spreading them into an even layer.
- Sprinkle remaining crumb mixture over top & then sprinkle with remaining sugar.
- Bake for 35-40 minutes or until toothpick test is clean.
- Let cool completely before cutting & serving- unless you are serving with ice cream, which is better with a warm bar.
- Cool about 15 minutes in pan before cutting when serving with ice cream.

Can I add a glaze to these Blackberry Crumb Bars?
Absolutely. Just make the glaze using 1 cup confectioners sugar whisked with 2 tablespoons milk. Then just drizzle that mixture over the top of these delicious bars.
Do you recommend these as gifts for the neighbors?
These make fabulous gifts for all your friends & neighbors. We like to pick up these disposable pans for gift giving. You could also just use the reuseable, baking pan & make that part of the gift.
Can Blackberry Crumb Bars be frozen?
Yes you can. We have found that removing the bars from the pan & wrapping first in plastic wrap & then in foil before placing in the freezer is best. Be sure to label with the date before freezing. Also, if you are adding a glaze, be sure that it has set before wrapping the bars.
Can I make these berry bars with another type of berry?
Absolutely. We have made these using a berry medley & they were a hit!
Can I make these berry bars with frozen berries?
Yes you can, however make sure to thaw the frozen berries by running under cool water & then patting dry before using them in this recipe. When using frozen berries it is important to remember that when you bake them, they can become soggy & add too much moisture to the recipe, causing it to not turn out quite right. So, whenever possible, please use fresh berries for these bars.

These were amazing. They needed a little longer in my oven than the recipe suggested. About 45 mins instead of 40, and I did add a glaze (grated some lime zest into the glaze and it was PERECT.) my fiancé said if he was not stopped, he would have eaten the whole pan.
