We love easy dinners. Our evenings are jam-packed and finding time to get a good meal on the table is hard.
Which is why I love this Creamy Tomato Tortellini Soup.

I mean, once I pick up my daughter from work it is straight to the dance studio. Then we are there until pretty late. The last thing I want to do is come home at 7 or 8 at night and start a huge dinner.

This one is as easy and adding most of the ingredients to the stockpot and let them simmer. Then add your tortellini and once they are cooked, it’s time to enjoy. The family can’t get enough of this one.
One thing I like to do when I am tight on time, I get this soup cooking then when I have to leave the house to do all our running, I pop it in the WonderBag and it keeps it hot for us until we get home. It is such a lifesaver.

What is a Wonderbag?
The WonderBag is this bag for cooking that was created to help women in other countries be able to step away from cooking by the fireside & spend more time with their families.
Women who are poverty-stricken in third-world countries typically spend 4-6 hours per day preparing meals. The WonderBag has helped to reduce this time spent cooking & tending to open fires.
The way it works is that the WonderBag has insulating properties that allow food that has been brought to a boil to finish cooking while in the bag.
This obviously reduces the use of additional energy (can reduce fuel usage up to 30%) – thus saving money. YAY for that!
Can this recipe be made in the slow cooker?
I would assume that it can be. I have not tried it. But you could add all your ingredients to the cooker and let cook on low for several hours.
I’m not sure how long it will take towards the end to cook the tortellini in a slow cooker, but now I will have to give this a try and update here.
**Note- you will have to reduce the recipe by probably half. This is a lot of liquid- it won’t all fit in a slow cooker.
HOW DO YOU MAKE Creamy Tomato Tortellini Soup?
- Add minced garlic & olive oil to your stock pot. Heat on medium until golden brown.
- Once the garlic is the desired color, add your tomato soup, tomato paste, milk, chicken stock & spices. Heat to boiling.
- At this point- if you are using the WonderBag- add in your tortellini, bring back to just beginning to boil. Remove from heat.
- Cover & enclose in your WonderBag. Allow simmering in WonderBag for at least 2 hours before serving.
- If you are making this on your stove to enjoy immediately – do not add your tortellini yet.
- Cover & reduce your heat to low & allow to simmer 15 min.
- Add in the tortellini & bring to a boil, cooking tortellini for the time recommended on the packaging.
- Serve immediately with croutons, shredded cheese, and sour cream if desired.

What is the best way to store leftover Tortellini Soup?
After serving, place leftover soup in a shallow airtight container. Be sure to label with the date before refrigerating. This recipe should keep for up to 3 days. As with most things, it is important to get food into the refrigerator within 1 hour after serving to prevent bacteria growth.
Why use a shallow container to store the leftovers?
Well, when the container is shallow, the contents chill faster than if you were to use a large, deep container. Ideally, you don’t want it to take too long for the leftovers to get to their chilled/stored temperature. As I mentioned, if the food remains above about 35 degrees for more than 1 hour after cooking, the bacteria starts to grow.
So, if the deep container of food takes several hours to finally get to that 35 degrees, the bacteria has been growing in your leftovers for those several hours. Not exactly what you want to happen.
It is definitely great for camping.
How many can this serve?
This will depend on the size of your portions. I can feed my family of 5 (with 3 adult children) for 2-3 nights depending on schedules. That doesn’t include seconds though.
Can this recipe be doubled?
This depends on the size of your stockpot. But in general, I would not recommend it. This recipe already makes a LOT of soup.

One of the big things that we think it is great for is at the firehouse. When the guys make food- sometimes a call can happen right in the middle of cooking. Everything gets turned off & left as is.
Sometimes they are gone for hours or all day. This can really waste food.
With this- they would be able to leave for their call & could have those staying back at the station pack up their food in the WonderBag & let it finish cooking.
Then when they get back to the station- whenever that is- they have a hot meal waiting for them AND no more wasted food.

Creamy Tomato Tortellini Soup
Ingredients
- 4 tbsp olive oil
- 1½ tbsp minced garlic
- 52 ounces condensed tomato soup the condensed contents of the cans + the added water it calls for.
- 4 cups milk
- 4 cups chicken stock
- 4 tbsp tomato paste
- 1 tbsp granulated garlic
- 2 pkgs refrigerated tortellini - your choice on variety 20 ounces each
- Salt & pepper to taste
- Parmesan cheese to top opt
- Croutons opt
Instructions
- Add minced garlic & olive oil to your stock pot. Heat on medium until golden brown. (about 1-2 min) Watch your garlic closely- it turns brown quickly.
- Once the garlic is desired color, add your tomato soup (water & condensed soup), tomato paste, milk, chicken stock & spices. Heat to boiling.
- At this point- if you are using the WonderBag- add in your tortellinis, bring back until it is just beginning to boil. Remove from heat.
- Cover & enclose in your WonderBag. Allow to simmer in WonderBag for at least 2 hours before serving.
