Who loves apple pie? It is such a favorite in our house. So it is no surprise that we are always looking for more ways to make treats & goodies that give us all that great apple pie flavor that we love.
A while back I was looking for a way to use up some extra apple pie filling I had made. The hubs was already begging me for more apple pie, but there wasn’t enough filling for a whole pie. So I came up with these Apple Pie Pockets that are positively scrumptious.
You see, the hubs grew up near a ton of orchards. He basically has apple pie running through his veins. He loves that almost more than anything else I could make.
So, not surprisingly, my son is crazy for anything cinnamon. He doesn’t even need the apples, he’s all cinnamon, all the time. But he won’t turn down apple pie, that’s for sure.
Needless to say, they were both pretty stoked when I came up with these little pie pockets. Everything they love in a neat little pocket they can carry around. I was definitely hearing the praises that day.

Even better is that they are so easy, even my son can make them in his apartment when he heads back to school. They are perfect for those who are just learning their way around the kitchen.

Can I make these with puff pastry?
Yes, but they would be more like a hand pie with a flaky exterior. That is still plenty delicious, but just different. The baking time might be different as well, so keep an eye on that.
Can I use homemade dough instead?
Sure, if you have a homemade dough that you absolutely love, by all means, give it a try. Please come back here & share your results.
What is the best way to store these apple pie pockets?
I have found that they tend to get soggy if placed in an airtight container, quite similar to a doughnut. So what I like to do is keep them in a paper lunch sack instead. It lets in just enough airflow to keep the outsides perfect without drying them out.
Can this recipe be frozen?
I wouldn’t recommend it. Because of the moist environment when freezing I think they would absorb too much of that & be quite soggy once thawed.
How many mini pies will this recipe make?
There are 8 biscuits in a tube, so you can get 8 pie pockets from this recipe.
HOW DO YOU MAKE Apple Pie Pockets?
- Preheat the oven to 400.
- Line a cookie sheet with parchment – set aside.
- Separate biscuits, pulling & stretching them out just a little before placing on the parchment-lined sheet.
- Place a tablespoon of apple pie filling in the center of each dough round.
- Pull the dough together to cover the filling, pinching the dough to seal & then flip it over, placing seam side down on the parchment.
- Repeat with all the rounds.
- Melt butter & then brush it over the top of each pie pocket.
- Sprinkle each one with the cinnamon & sugar mixture.
- Bake 15-18 minute or until puffed & golden brown.
Can this recipe be halved?
Absolutely. If you only need a few, this is easily halved & you can save the other biscuits from the tube for something else.
Can this recipe be doubled?
I love to double this recipe & when making these for the whole family, I almost always have to. Fortunately, nothing else changes about this recipe except the number of ingredients when doubling it – so make as many as you like.
